Finally found my recipe – I’ve been searching for 2 days! This is a recipe for a restaurant, and is measured by weight. I have cut it in half so it makes about 6 quarts. If you don’t want to ( or can’t ) weigh, just try to keep the same proportions.

Put 5 ounces of chicken fat or butter into a large stockpot – at least 6 qt.  Over medium heat cook 1/2 pound sliced celery, 5 ounces diced onion and 4 ounces diced green pepper until the onions are transparent.

Stir in 4 ounces of all-purpose flour and 1/2 teaspoon curry powder. You can vary the amount of curry powder, and use sweet or hot, depending on your taste.

Add 1 1/4 gallons of hot chicken stock and stir with a whisk until smooth.

Add 5 ounces of uncooked rice, 1 cup of canned tomatoes, and 6 ounces of cooked, diced chicken meat. Simmer about 1/2 hour until rice is tender.

Add 4 ounces of diced eggplant, 5 ounces of diced apple and salt and pepper to taste. Simmer about 15 minutes until apples and eggplant are done.

Notes: You can use uncooked, diced chicken and add it with the onions. I have never prepared this with the eggplant.

Soups

I just love making soup- hot and comforting in the winter, cold and refreshing in the summer. No high altitude adjustments are necessary, and you can tweak a recipe as much or little as you want. Here’s a great soup for a cold day. There is something almost magical about the combination of kielbasa, cabbage and tomatoes. They are better together than separately.I have no idea why its called Portuguese – isn’t kielbasa Polish?

Portuguese Soup

6 Cups chicken stock
1 pound kielbasa, diced
1 pound boiling potatoes, peeled and diced
1 can kidney beans, drained
1 can (about 14 oz)  diced tomatoes
1 small head of cabbage, chopped
1 onion, chopped
1 large carrot, peeled and diced
1/2 of a green pepper, diced
3 cloves of garlic, minced

I usually put the kielbasa, cabbage, onions, carrots, green pepper and garlic together in the soup pot and cook until the onions wilt and the green pepper and cabbage soften. Then I add the potatoes and chicken stock and cook over medium heat until the carrots and potatoes are soft. Add the tomatoes and simmer for about 1/2 hour. Add the beans.  Adjust the seasonings. You probably won’t need to add salt, but may need to add pepper.

Since I first found this recipe in a magazine the size of a package of kielbasa has shrunk from 1 pound to 13 ounces.  The smaller package seems to still add enough flavor, but feel free to add more if you wish. Really, you can vary any of the ingredients and this soup will turn out just fine! Sometimes I add spinach or kale!  I usually make a double batch so I have plenty of leftovers for lunches.

What a mess I made!

Yesterday I posted that I was going to move on to soup recipes – and I will. However this mornings breakfast was so traumatic that I need to vent! Since I’ve been trying to eliminate wheat and sugar from my diet I decided to try to make coconut flour pancakes. Honestly – you can only have eggs for breakfast so many days in a row before you really begin to crave something baked.
Thinking that I would just make a very small batch, I began with 1 cup of coconut flour, 1 teaspoon of baking powder, a little baking soda, some coconut sugar, cinnamon, 2 eggs, buttermilk, and some melted coconut oil. OMG! The mixture swelled up and looked like I had started with 3 cups of flour. And it was really thick, so I kept adding more buttermilk, and some regular milk, too. Eventually I got it thin enough to spoon onto a greased griddle. It sort of sat there, looking like a blob of cream of rice! No bubbles ever appeared, so I didn’t exactly know when to turn it over. The bottom seemed to be browning quickly, so I lowered the heat, let it cook for a minute more and then turned. Not easy! There was no cohesiveness to the pancake. It was very crumbly. After a couple more minutes I took it off the griddle. With a little syrup, it didn’t taste bad, but it was very dry.
Knowing that no one else in the family would even try tasting these, and considering the texture of the batter in my mixing bowl, muffins seemed like a good alternative. Some more coconut sugar, cinnamon, and some raisins went into the mixing bowl. I greased the pans really well because I had so much trouble turning the pancakes. I filled a 12 muffin pan (and still have batter left!) and put it in the oven at 350 degrees. After about half an hour, the muffins had pulled away from the sides of the pan.
The taste was ok, still had the texture of cream of rice, but dry. I guess I’ll be eating these for days! They are very filling.
Don’t think this is an experiment I’ll be trying again. I think I need to pay attention to the gluten -free recipes I’ve seen. There must be some trick I don’t know about!

Chocolate Mousse

Stir over low heat in a heavy saucepan until the chocolate melts:
2 Cups milk
1/4 Cup sugar
3 ounces grated sweet chocolate (like a Hershey’s bar- use your favorite brand. I like dark chocolate)

Let the mixture cool a little bit, and then pour a small amount over:
4 beaten egg yolks.
Stir well, and then put this mixture back into the saucepan. Stir constantly over low heat until the mixture thickens. Strain into a bowl that you can set into another bowl of cold water. Or even cold water in the sink. You want to chill the mixture quickly, but be careful not to get any water into it. Stir occasionally. You now have a chocolate custard!
Add 1 teaspoon vanilla. You can also add 2 Tablespoons brandy or rum.
Whip until stiff:
3/4 Cup heavy or whipping cream
Fold into the chocolate custard until well blended. Refrigerate as is, or place in individual custard cups. Cover surface with plastic wrap. Serve cold.
Serves 6

Chocolate Waffles

I’ve looked at a number of chocolate waffle recipes, and this one from Alton Brown seems like the best. Someone really, really should do waffle bites from this reicpe for the Taste of Chocolate. Topped with whipped cream (or maybe even chocolate whipped cream!) and a tiny bit of chocolate syrup. Yum!!!

Ingredients
7 ounces all-purpose flour, approximately 1 1/2 cups
1 3/4 ounces sugar, approximately 3 tablespoons
1.5 ounces cocoa powder, approximately 1/2 cup
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 whole eggs, beaten
2 ounces unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
16 ounces buttermilk, room temperature
4 ounces chocolate chips, approximately 3/4 cup
Vegetable spray, for waffle iron
Directions
Preheat waffle iron according to manufacturer’s directions.

In a medium bowl whisk together the flour, sugar, cocoa powder, baking powder, salt, and baking soda. In another bowl beat together the eggs and melted butter and vanilla, and then add the buttermilk. Add the wet ingredients to the dry and stir in the chocolate chips just until combined. Allow to rest for 5 minutes.

Ladle the recommended amount of waffle batter onto the center of the iron. Close the iron top and cook until the waffle is crispy on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.

Chocolate Loaf Cake

My Mom used to make a cake like this that the family loved. This recipe is about the closest I have come to duplicating it.

1 Cup boiling water
2 squares unsweetened chocolate
2 Cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
1/2 Cup butter, softened
1 teaspoon vanilla
1 3/4 cup packed brown sugar
2 eggs
1/2 cup sour cream
confectioner’s sugar

Preheat oven to 325 degrees.
In small bowl, pour boiling water over chocolate squares. Still until melted, let cool.
Grease and flour a 9 X 5 loaf pan.
In mixer bowl, beat butter and brown sugar until fluffy. Add vanilla and eggs, and beat until well mixed.
At low speed, mix in a fourth of the flour mixture alternating with some of the sour cream. Scrape the bowl often. Repeat until all the flour and sour cream have been incorporated.
Stir in chocolate mixture until just combined.
Pour batter into prepared loaf pan. Bake at 325 degrees for 60 to 70 minutes or until cake tester inserted in middle comes out clean.
Cool in pan for 15 minutes, then remove from pan and finish cooling on rack.
Dust with confectioner’s sugar before serving.

Rosie’s Chocolate Sour-Cream Layer Cake

This is another recipe adapted from the All Butter, etc Baking Book by Judy Rosenberg that I mentioned previously. My book has fallen apart and the pages are all stained – the sign of a great cookbook!
For this cake you need to line two 9″ round cake pans with parchment paper and grease them. Also, this cake is weather-sensitive. It hardly ever gets a perfectly rounded top, but if it is storming outside you might want to try to add a little more flour. Whatever happens the cake tastes great, and the icing will cover the sunken middle.
4 ounces unsweetened chocolate, melted
2 cups sugar minus 1 Tablespoon
1 1/2 cups plus 2 Tablespoons all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup hot coffee
1/2 cup sour cream
1/2 cup vegetable oil
2 eggs, at room temperature

Preheat oven to 350 degrees
Mix the hot coffee with the sour cream and vegetable oil and set aside. Put the sugar, flour, baking soda and salt into your mixer bowl and combine. Slowly add the hot coffee mixture and mix well. Stop and scrape the bowl to be sure every thing is combined well. Add the eggs one at a time, and then the chocolate. Scrape the bowl.
Divide the batter evenly between the 2 cake pans.
Bake at 350 degrees for 30 minutes. The cake should spring back to the touch and a toothpick should come out dry.
Cool pan on rack for 10 minutes, then remove cake from pan and cool cake on rack.

Frosting etc
When the cake is cool, split the layers. You can use toothpicks as a cutting guide. I like to use a flat cookie sheet or pizza peel to lift off the layer.
Spread seedless raspberry jam between the split layers.
Place one filled layer on a cake plate.

For the space between the two layers, mix Ghirardelli’s Ground Sweet Chocolate and whipping cream in your mixer bowl and beat with the whisk until nice and thick. About 1 cup of cream and 4 Tablespoons of chocolate turns out really well. You can adjust to your liking. More chocolate makes the mixture more mousse-like. I usually just use this between the two cakes, but you could do the whole cake with this chocolate whipped cream if you wish.

For the top and sides of the cake, I use sweetened whipped cream. A pint of whipping cream and 1/4 cup of powdered sugar whipped in a mixer works really well. As before, you can add as much sugar as you like. You can also put as much icing on as you wish.

This cake will need to be refrigerated.
