Christmas Cookies – Day 24

Butter-Pecan Shortbread Sticks

1 1/4 cup all-purpose flour
3 Tablespoons brown sugar
1/2 cup butter, cut in 5 or 6 pieces
2 Tablespoons finely chopped pecans
1/2 teaspoon vanilla
1 ounce milk chocolate, melted

Combine flour and brown sugar in food processor bowl.  Pulse once or twice to mix. Sprinkle butter pieces over surface and pulse 3 or 4 times until mixture resembles fine crumbs. Sprinkle pecans and vanilla over surface and pulse once or twice. Form into ball and knead until smooth.

On lightly floured surface, roll dough into an 8 X 6 rectangle. Cut into 24 2 X 1 inch strips. Place 1 inch apart on ungreased cookie sheet.

Bake at 325 degrees for about 20 to 25 minutes, or until bottoms just begin to brown. Transfer to wire rack to cool. Drizzle cooled sticks with melted chocolate.

Christmas Cookies – Day 18

Snowballs

1 cup butter, softened
1/3 cup granulated sugar
1 Tablespoon water
1 teaspoon vanilla
2 1/4 cups all-purpose flour
3/4 cup finely chopped walnuts
1 1/4 cups sifted powdered sugar

Beat butter with electric mixer for about 30 seconds. Add granulated sugar, beat until combined. Add water and vanilla and beat until combined. Beat in as much flour as you can with mixer, and stir in the rest with a wooden spoon. Stir in the nuts.

Shape dough into 3/4 inch balls.  Place on ungreased cookie sheets. Bake at 325 degrees for 12 to 15 minutes, or until lightly browned. Cool slightly on wire racks.

Put powdered sugar in plastic bag. While cookies are still warm, put 2 or 3 at a time in bag and shake to coat with sugar. Return to wire rack to finish cooling. When cool, shake again in powdered sugar. Makes about 72 cookies

Christmas Cookies – Day 15

Nut Strudel Cookies

8 ounces cream cheese, softened
1/2 cup butter, softened
2 cups all-purpose flour
1 cup sugar
1/3 cup milk
1/2 pound ground walnuts or pecans
powdered sugar

Beat cream cheese and butter in mixer until well combined. Add flour. Mix well. Shape into ball. Cover with plastic wrap and chill for 1 to 2 hours.

Cook sugar and milk in heavy saucepan until milk boils and sugar dissolves, stirring frequently. Add nuts. Cool.

Roll dough on floured surface to form 18 X 12 rectangle. Cut in half lengthwise. Spread each with nut filling. Starting from long side, roll each strip jelly-roll style. Cut in half crosswise. Place seam side down on ungreased cookie sheets. Cut into 1/2 inch thick slices without separating.

Bake at 350 degrees for 15 to 20 minutes or until done. Let cool slightly on sheets, remove. Cool on wire rack.

Dust with powdered sugar and separate slices. Cover and refrigerate or freeze. Makes about 60
