Christmas Cookies – Day 3

Gingerbread cookies

3 Cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/8 teaspoon cloves
2 teaspoons ground ginger
1/2 Cup butter, softened
1/2 Cup sugar
1/2 cup molasses

Mix flour, baking soda and spices in small bowl and set aside. With electric mixer, cream butter and sugar. Add molasses. Stir in dry ingredients. When well mixed, flatten into disk, wrap in plastic wrap and refrigerate for at least one hour. Roll on floured surface and cut into desired shapes. Bake at 300 degrees on parchment lined cookie sheets about 15 minutes, depending on thickness of cookie and size. When cool, frost with royal icing and decorate.

Note: If using these as ornaments, cut a hole for hanging before baking.
