Christmas Cookies – Day 2

Bourbon Balls

1 Cup chocolate chips (6 ounces)
1/4 Cup sugar
3 Tablespoons light corn syrup
1/3 Cup bourbon or rum
about 55 vanilla wafers
1/2 cup pecans

Melt chocolate chips in heavy saucepan or double boiler. Add the 1/4 cup sugar and stir well. Add the corn syrup. Cool a little and add the bourbon or rum.
In a food processor, pulse the vanilla wafers and nuts into crumbs. Stir into the melted chocolate. Refrigerate for about 30 minutes. Shape into 1 inch balls. You can roll these balls in sugar, confectioners sugar, chopped nuts, or sprinkles. I would do the sprinkles right before serving so they don’t melt. These need to be stored in a tightly covered container for at least a week before serving. Makes about 50
