Found this at allrecipes.com. Looks like a great way to use all those wonderful peaches from Grand Junction. Please eat an extra piece for me – its not on my no carb diet!!!
- 10 fresh peaches – peeled, pitted, and sliced
- 1/3 Cup all-purpose flour
- 1 Cup sugar
- 1/4 Cup butter
- recipe for double crust 9″ pie crust (or pre made from grocery)
Mix flour, sugar and butter into crumb stage. Place one crust in bottom of 9″ pie plate. Line the shell with some peach slices. Sprinkle some of the butter mixture on top. Continue alternating peaches and butter mixture until you have used it all. Top with the second pie crust – you can make this a lattice top if you like. Bake at 350 degrees for about 50 minutes. If your peaches are really juicy, turn the oven off and let the pie sit in the cooling oven.
