Here is the Second Recipe

Chocolate Meringues

  • 3 egg whites at room temperature
  • 1 cup sugar
  • 6 squares unsweetened chocolate, melted and cooled (1 oz each)
  • 1/2 teaspoon vanilla extract

Preheat oven to 350 degrees. Grease 2 cookie sheets.

In mixer bowl, beat egg whites until stiff but not dry. Add sugar, one Tablespoon at a time, and continue beating at high speed until smooth and glossy and sugar is dissolved. Fold in chocolate and vanilla. Drop rounded teaspoonfuls ont cookie sheets. Bake 15 minutes. e to wire racks to cool.  Do not freeze.  Makes about 5 dozen. Note from me – you can use superfine sugar in place of regular sugar. It dissolves better. Also consider placing the finished batter in a pastry bag and piping the cookies. It’s not too much more work and the results are worth the extra effort.
